New Recipe Ideas

More time at home means more time to try new recipes. And that’s what we all are doing!!!

Jackson and I tried a recipe pretty much like taco soup, but in casserole form. It was SO good, you have to try it. Plus it was super easy!

 

Kelley’s Taco Casserole: 

  • 1 pound ground beef cooked
  • 2 cups of cheese
  • 1 can of beans (drained)
  • 1 can of Rotel
  • 1 Can of sweet corn or frozen bag
  • 1 package of taco seasoning
  • 1 package/box of Spanish rice
  1. Cook rice and beef separately
  2. Mix all together and leave 1/2 cup of cheese and spread on top
  3. Put in oven 400 degrees for about 20 minutes

 

 

Elaina’s Homemade Pasta (I just did and had no idea it was so easy):

 

 

 

 

  • 2 eggs
  • 2 egg yolks
  • 2 cups flour
  • Pinch of salt
  1. Pour flour that has been mixed with pinch of salt on your counter or a cutting board
  2. Make a hole in the middle
  3. Pour whisked eggs in hole
  4. Slowly bring in the wall of flour whisking
  5. It will eventually turn into dough
  6. Knead for 10-15 min
  7. Cover ball in clear wrap for 1 hour
  8. Roll out until super thin, dusting with flour
  9. Roll thinned dough into a small burrito
  10. Cut to desired thickness
  11. Unravel pasta
  12. Boil for 90 seconds
