More time at home means more time to try new recipes. And that’s what we all are doing!!!
Jackson and I tried a recipe pretty much like taco soup, but in casserole form. It was SO good, you have to try it. Plus it was super easy!
Kelley’s Taco Casserole:
- 1 pound ground beef cooked
- 2 cups of cheese
- 1 can of beans (drained)
- 1 can of Rotel
- 1 Can of sweet corn or frozen bag
- 1 package of taco seasoning
- 1 package/box of Spanish rice
- Cook rice and beef separately
- Mix all together and leave 1/2 cup of cheese and spread on top
- Put in oven 400 degrees for about 20 minutes
Elaina’s Homemade Pasta (I just did and had no idea it was so easy):
- 2 eggs
- 2 egg yolks
- 2 cups flour
- Pinch of salt
- Pour flour that has been mixed with pinch of salt on your counter or a cutting board
- Make a hole in the middle
- Pour whisked eggs in hole
- Slowly bring in the wall of flour whisking
- It will eventually turn into dough
- Knead for 10-15 min
- Cover ball in clear wrap for 1 hour
- Roll out until super thin, dusting with flour
- Roll thinned dough into a small burrito
- Cut to desired thickness
- Unravel pasta
- Boil for 90 seconds
